Yogurt Cake with Fruit and Biscuit

It’s not a secret that every child loves cake! Unfortunately, most cakes contain high amounts of sugar and other ingredients that are unhealthy for children. Therefore, I would like to share with you a healthy cake recipe, filled with fruit and other nutrients.

Ingredients:

For Biscuit:

  • 1 egg

  • 3 tbsp (or less) of sugar of your choice

  • 100 ml of milk

  • 1 tsp baking powder

  • 4 tbsp oat flour

  • Pinch of salt

For Yogurt Filling:

  • 15 g of gelatin

  • 300 ml of hot water

  • 500 g of yogurt of your choice

  • Fruit of your choice. (It is best to use orange, strawberry, blueberry, banana, kiwi, peach, nectarine, pineapple, mango).

Directions:

Step 1: To make a biscuit, crack an egg in a bowl and mix with a pinch of salt and sugar. Add milk, oat flour, and baking powder, and continue mixing until smooth.

Step 2: Pour the mix onto a medium-sized baking sheet so it’s about 1 inch high, and bake in the oven at 360F or 180oC for 15-20 minutes

Step 3: Let the biscuit cool and then cut it into small cubes, about ½ of an inch.

Step 4: Peel and cut the fruit.

Step 5: To make the yogurt filling, mix gelatin in hot water and stir continuously until dissolved. Then mix it with yogurt.

Step 6: Take a little bit of gelatin and yogurt mixture and cover the bottom of the bowl for the cake, then layer the fruit on top.

Step 7: Pour the rest of the yogurt and gelatin mixture over the fruit. If the mix is too thick to pour, reheat it in the microwave for 30 seconds and then pour it into the bowl.

Step 8: Leave the cake in the fridge for 3-4 hours.
