Chili Recipe

I love chili! This recipe scores high on both taste and nutrition for your family it is very satisfying, easy to make and so very full of flavor!

Chili Ingredients Olive oil 1 large onion, finely chopped 5 cloves garlic, chopped 2 cups (500 ml) regular ground meat or vegan ground meat substitute 2 tablespoons tomato paste 1 tablespoon sweet paprika 1/2 teaspoon chilli powder 1/2 tsp coriander seeds(optional) 1/2 tsp dried oregano 1 14-oz (398-ml) can diced tomatoes or 2 cups cherry tomatoes 1 14-oz (398-ml) can red kidney beans drained and rinsed 1 tsp Brown sugar Salt and freshly ground black pepper to taste 1/2 Green bell pepper finely chopped 1/4 cup water

Next is a recipe for this sauce to put on top: Soured mint cream 1/2 Cup cream,(half and half is good) 1/2 cup plain yogurt 1 tablespoon finely chopped fresh mint or 2 teaspoons dried mint 1 tbsp freshly squeezed lemon juice A little lemon zest Salt and freshly ground black pepper to taste

To make the soured mint cream sauce 1. Combine all the ingredients in a bowl and mix together with a fork. Spoon over the chili. This cream also works well on baked potatoes.

Instructions for making chilli 1. Heat a drizzle of oil in a nonstick frying pan set over medium heat. Fry the onion and garlic, but don’t allow it to stick or burn ,a minute or two should do the trick. 2. Add the ground meat, stirring it around a little. 3. Keep stirring while you add the tomato paste, then the spices and herbs. Reduce the heat to low and cook, covered, for 30 seconds. 4. Add the tomatoes, beans, sugar, and salt and pepper. Cover and cook over low heat for about 45 minutes, stirring occasionally. 5. Add the green pepper and water, and continue to cook for a few more minutes. The green pepper will cook in the heat of the mixture, retaining a little crunched for texture. 6. Serve topped with soured mint cream with cornbread on the side.
